Easter Top Deck Pannacotta

 

Note: both recipes are the same apart from the cacao powder in the chocolate flavour, so you can choose to double the mix, halve them, and then add the cacao powder to one. Due to the bitter taste of cacao, you may want to add a little more sweet to that mix as well.

White chocolate vanilla layer

Ingredients

  • 1 Tbsp Changing Habits Gelatin
  • 1 cup water
  • 1 cup Kultured Wellness Yoghurt
  • 3 tsp vanilla essence or 1 vanilla pod seeds
  • ¼ cup cacao butter
  • 2 Tbsp Changing Habits Coconut Oil
  • Liquid stevia drops to taste, or 1 Tbsp of Lakanto, or 1 Tbsp honey
  • Pinch of salt
Method:
  1. Combine the gelatin and water and set aside to bloom.
  2. Add all ingredients except the coconut yoghurt into a low heated saucepan, and stir until all is well combined and the gelatin has dissolved.
  3. Remove from the set aside to cool slightly.
  4. If using coconut yoghurt, then add it to the mix and either stir well or place in a blender to whiz just for a few seconds to combine well.
  5. Taste the mix and ensure it is sweet enough for you or your audience.
  6. Allow to cool slightly, otherwise, it will separate!
  7. Give it one last stir through, and then pour into moulds, jars or glasses to halfway.
  8. Place in the fridge to set, which will take roughly 1-2 hours.

Chocolate layer

Ingredients

  • 1 Tbsp Changing Habits Gelatin
  • 1 cup water
  • 1 cup Kultured Wellness Yoghurt
  • 3 tsp vanilla essence or 1 vanilla pod seeds
  • ¼ cup cacao butter
  • 2 Tbsp Changing Habits Coconut Oil
  • 2 Tbsp cacao powder
  • Liquid stevia drops to taste, or 1-2 Tbsp of Lakanto, or 1-2 Tbsp honey
  • Pinch of salt

Method:

  1. Combine the gelatin and water and set aside to bloom.
  2. Add all ingredients except the coconut yoghurt into a low heated saucepan, and stir until all is well combined and the gelatin has dissolved.
  3. Remove from the heat and set aside to cool slightly.
  4. If using coconut yogurt, then add it into the mix and either stir well or place the mix in a blender to whiz just for a few seconds to combine well.
  5. Taste the mix and ensure it is sweet enough for you or your audience and make any alterations.
  6. Allow to cool slightly, as if it is too hot, it will separate.
  7. Once the white chocolate layer has set, give the mix one last stir and then gently pour over the top. 
  8. Place in the fridge to set, which will take roughly 1-2 hours.

Optional chocolate ice-magic:

Ingredients:

  • 2 Tbsp cacao powder
  • 2 Tbsp ghee (or coconut oil if required, though ghee tastes amazing)
  • Pinch of salt
  • 10 drops of liquid stevia, 1 Tbsp of honey, maple syrup, or Lakanto or monk fruit sweetener to taste

Method:

  1. In a low heated saucepan, combine all ingredients and stir till everything is mixed though well. 
  2. Allow to cool just slightly, a little warmth is okay and preferred, though we don't want to melt the pannacotta.
  3. Once the pannacotta has set and ready to serve, pour the chocolate ice-magic over the top just before serving. It is still delicious when it has hardened.
