Banana Coconut Yoghurt With Chia Berry Jam

Bananas are known to have mood enhancing as well as sleep-inducing effects and, I donā€™t know about you, but a good sleep makes me happy! And the added bonus of this recipe is that the bananas are fermented, which is great news for those on a low carb diet. Many people tend to cut out the ever dependable banana due to the sugar content, but fermenting them means you can now enjoy them without impacting your blood sugar levels and also increasing nutrient bioavailability.

Bananas contain high levels of tryptophan, which is a precursor for serotonin, our feel good hormone. Not only is serotonin a natural anti-depressant, it can also assist with anxiety, insomnia, irritability and general moodiness.

Bananas also contain nutrients such as vitamins B6 and B9, magnesium and potassium, which are also known to reduce things such as anxiety and depression.

Ingredients

  • 1-2 fermented bananas
  • 1Ā½ cupsĀ Kultured Wellness Coconut Yoghurt
  • 1 tsp vanilla powder
  • Stevia to taste
  • Chia & Berry Jam to serve on top (see below)

Method

  1. Add the coconut yoghurt, bananas, vanilla and stevia to taste into a blender or thermomix and blitz until smooth and creamy. Scrape down the sides and blend again as needed.
  2. Scoop the yoghurt into 2 bowls.
  3. Top with ChiaĀ Berry Jam.

    Method

    1. Mix the chia seeds, coconut water kefir and raspberries together in a clean glass jar and allow it to ferment for 8-12 hours. You can blend this together if you donā€™t want the fruit to be left chunky.
    2. Mix through the stevia and vanilla powder. Taste and adjust if needed.
