Slow Cooked Lamb Curry

When ever I think of B6, I always think of Lamb. Lamb is such a wonderful source of B6.
Vitamin B6 not only promotes healthy brain function but has many other benefits including:

This nourishing recipe is perfect for Autumn nights and is so easy to throw together.

 

Serves 4-6

INGREDIENTS

  • 1kg diced lamb
  • 1 Tbsp coconut oil
  • 1.5 Tbsp curry powder (rice flour free)
  • ½ Tbsp cumin powder
  • ½ Tbsp ground cloves
  • ½ Tbsp fresh or dried thyme leaves
  • ½ Tbsp turmeric powder
  • A good pinch or two of cayenne pepper
  • ½ Tbsp fresh or dried ginger
  • 4 kaffir lime leaves
  • 300ml Kultured Wellness Coconut Yoghurt
  • 1/3 cup filtered water
  • 1 onion, diced
  • Salt and pepper to taste
  • Garnish with fresh coriander leaves and sliced chili (optional)

 METHOD

  1. Heat a frying pan on medium heat and brown the lamb pieces in coconut oil until golden and all sides are sealed.
  2. Add all the ingredients to your slow cooker and cook on low for 4-5 hours.
  3. When the curry is ready serve with cooked and cooled rice, cauliflower puree and or cooked veggies of your choice.
  4. Sprinkle the coriander and chili on top and serve with coconut yoghurt on the side.
  5. Serve and enjoy immediately.

Note: This dish is best served with rice and veggies, puree, or cauliflower rice and veggies. If eaten on it’s own it can be a little strong in flavour
